We have a Texas Roadhouse right down the street from us and it is ALWAYS full. It is mind-blowing actually. It is for sure the busiest restaurant around.

One of our best buddies has the prime rib every single time that we go. He just loves it so much. So of course, we had to figure out how on earth to replicate their recipe.

For many years now we have held a Christmas brunch. It is a chance for our closest group of friends to get together, make food, and have a full day just being together.

It is truly my favorite day of the year. One of the best parts of it is planning for it because every year we have a theme.

One year we decided to center the dinner around prime rib (a.k.a. Standing rib roast) and it was AHmazing.

We took great pride in the food that year because cooking prime rib is a labor of love and it can be a bit scary to do.

The truth is though, it really isn’t that difficult. You just have to follow the steps and pay close attention.

What is prime rib?

Is prime rib the same thing as ribeye is a popular question. It is a bit confusing so let’s see if we can simplify the topic.

Prime rib is also often called a standing rib roast. Prime rib is a section of beef that is also known as the ribeye roll.

What makes it prime rib is how it is cooked. Prime rib is cooked as an uncut set of ribeyes and is cooked as a roast in its own juices.

The phrase of prime rib isn’t actually related to the grade of the beef. So you can actually have a “prime” prime rib.

I like to think of prime rib as a roast of uncut ribeyes.

How to cook the Texas Roadhouse prime rib recipe

This is our overview of how to cook the Texas Roadhouse prime rib recipe with a few additional tips. Down below you will find the detailed instructions with temperature and measurements.

This recipe requires planning ahead because the steps are spread across 4 days. So we will break the steps up by day to go over what this looks like.

Day 1: This day is all about making the marinade and allowing all of those lovely flavors to combine.

  • In a glass bowl, mix together the kosher salt, minced garlic, liquid smoke, soy sauce, olive oil, sugar, and pepper. Mix this up really well. Then cover it with a lid or cling wrap and place it in the fridge.
  • Multiple times throughout the day, swirl the mixture or stir it to keep mingling those flavors.

Day 2: This day is all about marinating the prime rib.

Day 4: This is the day of cooking.

  • Today is about properly planning out your day of cooking. You will want the prime rib to sit out at room temperature for about 2 hours prior to cooking.
  • Then it should take about 2 and half hours for the prime rib to cook in the oven. Cook times will vary based upon the size of the roast and the oven.
  • So checking the temperature of the rib roast during the cooking process will be very important. With that said tip one is to make sure that you know where your meat thermometer is and have it handy.
  • First, remove the rib roast from the fridge. Leave it covered by allowing it to set out at room temperature for 2 hours.
  • Next, preheat your oven.
  • While the oven is preheating transfer the roast to a roasting pan with a rack.
  • Then cook the rib roast at 400 F for 30 minutes. This step is so that you get that beautiful sear on the outside of the roast.
  • Then reduce the oven temp and slowly cook the roast for 2 more hours or until the roast reaches your desired level of doneness.
  • We cook ours until the internal temperature is 120 F.

Tips and Tricks

  • Gather all of your supplies in advance. In particular, make sure that you have a meat thermometer. If you don’t order one real quick because it is crucial to getting this recipe right.
  • Be sure that the oven is super hot when you first put it in the oven. You don’t want the oven warming up with the meat in it.
  • When shopping for your prime rib don’t be shy about asking for help. This is a great time to utilize the expertise of the person behind the counter. Tell them that you want the best cut of prime rib that they have. Go as far as asking them if they could cut you a special piece out of something in the back.
  • Don’t carve the roast right away. Allow the meat to rest for 15 minutes at least. It is important to allow the juices to settle. Carving it too soon will create a big disappointment. Of course, you are excited but you have waited days for this moment, just give it 15 more minutes.
  • Don’t put a cold roast in the oven. Be sure to allow the roast to come to room temperature before you cook it.

Texas Roadhouse Prime Rib Recipe

Cook Time: 2 hours 30 minutes

Inactive Time: 3 days

Total Time: 3 days 3 hours 30 minutes

This copycat recipe is for cooking the Texas Roadhouse prime rib. Prime rib is also known as a standing rib roast.

Ingredients

  • 1 prime rib roast
  • 3 T Kosher salt
  • ¼ c garlic, minced
  • ¼ c liquid smoke
  • ¼ c soy sauce
  • 1/8 c olive oil
  • 3 T sugar
  • 2 T pepper

Instructions

  1. (3 days before cooking) Make the marinade sauce. In a bowl, mix together all of the ingredients except for the prime rib. Stir really well. Then cover the bowl with a lid and refrigerate for 24 hours. Note: Throughout the day as you visit the fridge, swirl the ingredients around to keep them mixed or give them a quick stir and then place back in the fridge.
  2. (2 days before cooking) Marinade the prime rib roast. Place the prime rib in a large pan with sides. (We like to use a glass casserole dish with sides. ) Rub the marinade all over the rib roast. Be sure to coat all sides of the roast. Cover the dish completely with cling wrap. Place the pan in the fridge and allow it to marinate for 2 days.
  3. Day of cooking. Remove the rib roast from the fridge 2 hours before cooking and allow it to come to room temperature.
  4. Preheat the oven to 450 F degrees.
  5. Remove the roast from the baking dish and remove the cling wrap.
  6. Place the rib roast on a baking rack that's nested into a high-sided baking pan.
  7. Bake the rib roast at 450 F for 30 minutes to sear the outside of the meat.
  8. Reduce the oven to 250 F and cook for an additional 2 hours or until the roast reaches an internal temperature of 125 F for rare prime rib.
  9. Save the meat juice to make au jus.

Notes

This recipe is a multi-day process. You will want to make the marinade 3 days before cooking and marinate the meat 2 days prior to cooking the meat. So be sure to plan ahead. It is well worth the time and effort.
