Special Homemade Pizza

Filipino Style Recipe: Special Homemade Pizza is a typical pizza made of oven-baked flat, round bread topped with tomato sauce, cheese and various toppings. You may choose various toppings based on your budget and what you prefer. Pizza crust is available in leading supermarket or you may do it yourself. Good luck and enjoy!

Good for 2 pizza

Ingredients:
2 pieces pizza crust(10-12 inch diameter)
1 1/2 cup pizza sauce or tomato sauce
150 grams mozzarella cheese or quick melt, grated

Toppings:
1 medium-sized white onion, cut into rings
2 red and green bell peppers, slice thinly
1/2 cup pineapple tidbits
20 pieces pepperoni slices
1/4 cup beef toppings/nuggets
5 slices ham, cut into small squares
4 tablespoons sliced black olives

Procedures:
Part 1
1. Place pizza crust in a flat surface, ladle enough pizza sauce into the center and spread it out in a spiral motion. Leave about 1/2 inch of unsauce pizza at the edges.
2. Sprinkle shredded cheese on top then arrange other toppings evenly.
3. Spread shredded cheese on top of the toppings. Repeat for the other crust.

Part 3
1. Preheat oven over 350 degrees Fahrenheit then bake for 15-20 minutes or until the crust are crisp and the cheese is melted.
2. Remove from the oven then transfer to round sheet. Cut into 8-12 serving slices then serve with hot sauce.

Nutty Brownie Torte

Filipino Style Recipe: This recipe is called Nutty Brownie Torte because of the rich chocolate taste with the nuttiness of the peanuts. The top is a generous layer of chocolate and the center is a chewy and gooey brownie. The peanuts add an interesting contrast to the consistency of the torte. This is a perfect treat for your kids and guests.

Ingredients:
1 cup dark chocolate, chopped (I used Beryl’s Gourmet – Dark Compound)
1 cup chopped peanuts
1 cup flour
1/2 cup butter
1/2 cup sugar
1/2 cup sugar syrup (dissolve 1 cup sugar in 1/4 cup water)
1/4 cup water
3 eggs
1 teaspoon vanilla

Frosting:
1/2 cup chopped Beryl’s Gourmet – Dark Compound chocolate bar
2 tbsp butter
1 tbsp sugar syrup
1 tsp vanilla
choco sprinkles (optional)

Procedures:
Part 1
1. In a 9×6 inch baking pan, brush with butter then sprinkle with flour. (This will prevent the brownie from sticking in the baking pan.)
2. In a separate pan, melt 1/2 cup butter and 1/2 cup sugar syrup over low heat then stir in 1 cup chocolate. Remove from heat.
3. Add sugar and eggs then stir. Add vanilla, flour and nuts and mix until just blended.
4. Pour the mixture into baking pan and bake in a preheated oven over 300 degrees Fahrenheit for 20 minutes or until center springs back when touched. (Overbaking will make the brownies dry.)
5. Remove from oven and let it cool for 5 minutes before removing from the pan.

Part 2
1. To make the frosting, combine butter, sugar syrup, and chocolates over low heat until melted.Remove from heat then stir in vanilla.
2. Frost top and sides of the brownie then add sprinkles. Chill until set. Slice, serve and enjoy!

Cashew Polvoron

Filipino Style Recipe: Cashew Polvoron is another variety of polvoron made up of toasted flour, powdered milk, sugar, butter and ground cashew. This is a simple sweet delicacy and easy to prepared.

Estimated time of preparation: 20-25 minutes(plus wrapping time)
Estimated time of cooking: 15 minutes
Good for 30-35 pieces

Ingredients:
4 cups all purpose flour
2 cups powdered full cream milk
1 1/2 cup white sugar
1 1/8 cup butter, melted
1 cup ground cashew

japanese paper or or cellophane
polvoron moulder

Procedures:
Part 1
1. In a pan over medium heat, toast flour for about 15 minutes or until color turns to light brown. Stir constantly.
2. Transfer to a bowl and let it cool. Set aside.

Part 2
1. Add powdered milk and sugar then mix until well combined.
2. Sift then pour melted butter. Mix well until smooth.
3. Add ground cashew then stir well.

Part 3
1. In a polvoron mold, scoop and press the mixture until compact.
2. Wrap the molded polvoron with cellophane wrapper then secure by twisting both ends.
3. Repeat until all the mixture are consumed. Done!

Yema Cake

Filipino Style Recipe: Yema cake is a creamy and delicious custard cake originate in southern part of Luzon. This dessert is made from 2 layer chiffon cake coated with yema frosting. The custard is almost similar to brazo de mercedez and dulce de leche that consists of egg yolks, condensed milk, evaporated milk and vanilla extract.

Ingredients:
Chiffon Cake:
Flour Mixture:
1 1/4 cups cake flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 cup white sugar

Egg Yolks Mixture:
4 egg yolks from large-sized eggs
1/3 cup whole milk
1/2 teaspoon vanilla extract
1/2 teaspoon lemon extract
1/4 cup vegetable oil

Egg White Mixture:
4 egg whites
1/4 cup white sugar
1/4 teaspoon cream of tartar

Yema Frosting:
6 egg yolks
1 can condensed milk
1 big can evaporated milk
1 teaspoon vanilla extract

Procedures:
Part 1
1. Preheat oven to 350 degrees Fahrenheit.
2. In a mixing bowl, mix flour mixture until well blended then sift.
3. In a separate bowl, combine egg yolks mixture then whisk slowly until smooth.
4. Combine flour and egg yolks mixture while continue mixing until smooth and well blended.

Part 2
1. In another bowl, beat egg whites and cream of tartar until frothy.
2. Gradually add white sugar while continue mixing until stiff peaks are formed.
3. Gently add egg white mixture into flour and egg yolks mixture then whisk until well blended.
4. Add vegetable oil then fold.

Part 3
1. In a cake pan lined bottom with parchment paper then pour batter mixture then bake for 40-45 minutes.
2. Remove from the oven then let it cool. Remove cake from the pan then refrigerate before frosting.

Part 4
1. In a sauce pan, combine yema frosting mixture then cook while continuously stirring over low heat until becomes thick.

Part 5
1. Slice chiffon cake horizontally into two equal parts.
2. In a cake board, place the top slice upside down then spread a thin layer of yema frosting at the top.
3. Place the other slice on top, bottom side up then spread and cover the whole cake with yema frosting.
4. Sprinkle with grated cheese on top then refrigerate before serving.

Cream-Filled Cupcakes

Filipino Style Recipe: Cream-Filled Cupcakes is another variety of cupcakes filled with cream filling made of cream cheese, sugar, salt and chocolate chips. This can be served during breakfast together with coffee or during mid-afternoon snack.

Estimated time of preparation: 30-40 minutes
Estimated time of baking: 20 minutes(plus chilling time)
Good for 12-14 cupcakes

Ingredients:
Dry Ingredients:
1 cup all purpose flour
3 tbsp cocoa powder
1/4 tsp salt
2/3 cup white sugar
3/4 tsp baking soda

Liquid Ingredients:
2 eggs, beaten
1/2 cup water
1/3 cup vegetable oil
2 tsp vinegar
1/2 tsp vanilla extract

Cream Filling:
1 pack cream cheese, softened
4 tbsp white sugar
1/8 tsp salt
2/3 cup semi sweet chocolate chips

Procedures:
Part 1
1. In a mixing bowl, sift together the dry ingredients then mix well. Set aside.
2. In a separate bowl, combine liquid ingredients then mix well.
3. Combine dry and liquid ingredients then mix until well blended.

Part 2
1. In another bowl, combine cream filling ingredients then mix well until sugar is fully incorporated.
2. Add chocolate chips then mix well. Set aside.

Part 3
1. In a muffin pan, line muffin cups then pour batter up to half of muffin cups.
2. Scoop cream filling and put in the center of each muffin cups then pour the remaining batter.
3. Bake in preheated oven at 300 degrees Fahrenheit for 20 minutes or until done.(Cupcakes is done when a toothpick inserted in the center comes out clean.)
4. Chill for at least 4 hours before serving.

Cheesecake Brownies

Filipino Style Recipe: Cheesecake brownies is another variety of chocolate brownies marbled with cheesecake. This kind of brownie has an extraordinary design comes with chocolate buttons inside. This can be serve together with coffee or milk and commonly serve as mid-afternoon snack.

Estimated time of preparation: 40 minutes
Estimated time of baking: 30 minutes
Good for 16 brownies

Ingredients:
Cheesecake layer:
1 pack(225 grams) cream cheese, softened
1/4 cup sugar
1 egg
1/2 cup dark chocolate buttons

Chocolate layer:
1/2 cup dark chocolate buttons
1/4 cup butter
1/2 cup white sugar
1/4 tsp vanilla extract
2 eggs
2/3 cup all purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt

Procedures
Part 1
1. In a mixing bowl, combine cream cheese and sugar then beat until smooth.
2. Add egg and beat again until well blended then add chocolate buttons. Set aside.

Part 2
1. In another bowl, melt chocolate and butter together by putting it under boiling water then stir until well blended.
2. Add in sugar, vanilla, and eggs into chocolate mixture while continuously mixing.
3. Sift in the flour, baking powder, and salt into chocolate mixture then mix until just blended.

Part 3
1. Grease a 9 inch square baking pan with melted butter then line with wax paper. Brush butter on the paper.
2. Pour half of the chocolate mixture over the baking pan then spread the cream cheese mixture over the first layer.
3. Pour the remaining chocolate mixture on top then swirl a knife on top to make marble pattern.
4. Bake in a preheated oven over 300 degrees Fahrenheit for 25-30 minutes or until top is crinkled.
5. Remove from the oven and let it cool, remove the wax paper then cut into squares. Refrigerate before serving.

Chewy Brownies

Filipino Style Recipe: Chewy brownies is another popular dessert originate in United States which is most likely between cake and cookie in texture. Brownie comes in different varieties and may include nuts, chocolate chips, frosting, whipped cream and other ingredients. This is usually serve together with coffee or milk.

Estimated time of preparation: 40 minutes
Estimated time of baking: 30 minutes
Good for 12 brownies

Ingredients:
1/2 cup dark chocolate buttons
2 tbsp. natural cocoa unsweetened
1 cup flour
1/2 cup butter, softened
2 teaspoon vanilla extract
2 raw eggs, at room temperature
1 cup sugar
1/4 teaspoon salt
1/2 cup mini chocolate chips(optional)

Procedures:
Part 1
1. Preheat oven at 300 degrees Fahrenheit.
2. Grease an 8 inch square baking pan with butter then line with wax paper. Brush butter on the paper.

Part 2
1. In a bowl, melt butter and chocolate over boiling water. Remove from heat and let it cool slightly.
2. Mix in sugar, salt, and vanilla on the chocolate mixture. Add eggs one at a time while stirring until well blended.
3. Add flour, cocoa and chocolate chips then beat until well incorporated but do not over beat(approximately 30-60 seconds of beating).
4. Pour the mixture in a grease baking pan then bake for 30 minutes or until done.(Brownies is done when a toothpick inserted in the center comes out clean.)

Part 3
1. Remove from the oven and let it cool enough to handle.
2. Run a knife around the inside of the pan then flip into a flat surface.
3. Remove the paper from the brownies then cut into squares. Refrigerate before serving.

Hawaiian Pizza Pandesal

Filipino Style Recipe: Hawaiian Pizza Pandesal is inspire to typical pizza made of oven-baked flat, round bread topped with tomato sauce, cheese and various toppings. We have several left-over pandesal this morning, I want to use it before it expire. Since I am craving for pizza and I already have some ingredients, I decided to use pandesal as alternative to pizza crust. The outcome is very good and the kids love it.

Estimated time of preparation: 15 minutes
Estimated time of baking: 8-10 minutes
Good for 8 servings

Ingredients:
8 big-sized pandesal, cut in half
140 grams pizza sauce or tomato sauce
100 grams mozzarella cheese or quick melt, grated

Toppings:
100 grams pineapple tidbits, drained
100 grams sweet ham, cooked and cut into cubes

Procedures:
1. Place pandesal in a flat surface, ladle enough pizza sauce into the center and spread it out at the edges.
2. Sprinkle shredded cheese on top then arrange toppings evenly.
3. Spread shredded cheese on top of the toppings. Repeat for remaining pieces.
4. Pre-heat oven over 200 degrees Fahrenheit then bake pandesal for 8-10 minutes or until the cheese is melted.
5. Remove from the oven then transfer to serving sheet. Serve hot.
