It's pretty much a dump and bake kind of dish, nothing complicated, no chopping, no using various different pans and best of all, is it can all be ready and on the table in less than 40 minutes. The perfect amount of time for you to make the main dish to go along with this.

I don't know why I love that combination so much, but its so good.

Really though, cheesy anything will go with a wide range of different meals. Another favourite is Pulled Pork. Think of pulled pork with Mac and Cheese, but keeping it healthier with lots of veggies.

But how do we get a creamy cheesy sauce without using heaps of calories and cream and flour AND butter?

Simple really - I use some light cream cheese, stock and then a little starch for thickening. It works perfectly and is my go to when I need a creamy sauce for anything.

How about ⅓ veggies in this Cheesy Vegetable Bake?

Totally covered with this recipe, I mean the bulk of the ingredients are vegetables, so it's a great side dish if you are doing a day instead of pasta, rice, potatoes etc and because it's creamy AND cheesy it feels like a treat.

Occasionally I will add in some carrots or sliced leeks too for additional vegetables. How good does that sound? Don't be afraid to try different vegetables.

If you are fussy about vegetables but think these Cheesy Vegetable Bake will encourage you to eat more, add all kinds of vegetables to try and vary it up. Eating vegetables doesn't mean they have to be boring, over boiled and tasteless.

Creamy Cheesy Vegetable Bake

Cook Time: 35 minutes

Total Time: 45 minutes

Creamy Cheesy Vegetable Bake - a simple and delicious vegetable side dish that's is so good you may want to eat it as your main.

Ingredients

  • 750g (26.5oz) frozen broccoli and cauliflower florets
  • 240ml (1 cup) of chicken or vegetable stock
  • 2 tablespoons of garlic and herb light cream cheese
  • 1 tbs of cornstarch (or arrowroot, tapioca powder)
  • 1 clove of garlic, crushed
  • fresh chopped Italian parsley
  • 90g of cheddar
  • salt and black pepper

Instructions

  1. Preheat oven to 200c or 400f (gas mark 6)
  2. Place the frozen veg in a baking dish.
  3. Add the hot stock to a jug, with the cream cheese and whisk until it is all melted.
  4. Stir in the crushed garlic.
  5. Mix the cornstarch with a couple of tablespoons of water and whisk into a slurry, whisk this into the stock.
  6. Pour over all the veg and season well with salt and black pepper.
  7. Top with the grated cheese
  8. Place in the oven and bake till cheese is melted and golden (approx 30 minutes)
  9. Then place under the grill for 5 mins, just to brown the top.
  10. Sprinkle with fresh chopped parsley and season with salt and black pepper.
  11. Serve and enjoy!!

    btw... when I do Cauliflower cheese, after the sauce goes on, I put cherry tomatoes (cut in two) and raw onions (not to much) and scatter this around the dish and than put it in the oven.

    I got that from the SW magazine somewhere in 2005/7. So simple, but the taste is just that little extra!

    Very tasty, a great alternative to the usual recipe using a fattening roux.
    I'm in Perth WA and can't get the garlic cream cheese so just added my own to light Philadelphia.
    My 7 year old grandson couldn't get enough of it. Will definitely be making this with every roast from now.
